Isn't she the cutest? I met her on MySpace. She found me. Her husband's last name is Knox and I guess she was seeking out Knox's in the outer galaxies. I'm not sure why she sent me a recipe—I guess we must have been discussing food in some correspondence. 
Here is the recipe as she sent it to me. 

Candy's Antipasti recipe

Prep time: it depends on if you make the pepper or use canned. 1 hour canned 2 hours fresh it is worth it! major yum!

Can be served cold or warm, not hot!

You will need:

  1. 1 or 2 bunches of Brocolli rabe- depends how many people you are cooking for. It makes a lot. Cook brocolli until tender with garlic as much as you care for I add a couple of tablespoons to the chicken broth and fresh ground black pepper.
  2. Fresh Asparagus—a bunch don't over-cook, the brocolli takes longer than the aspargus.
  3. Fresh green beans—cooked al denti.
  4. Add fresh mushrooms to the brocolli and chicken broth.
  5. You can use canned roasted red peppers (Costco has really nice canned peppers) or take time make your own.
  6. Roasted Red peppers-roast over open flame* rotate until the entire papper is black—set inside of a paper bag let cool a bit, then shake the paper most of the black will come off. Seed the peppers and cut into thick strips. You need a large bowl.
  7. Add your favorite black olives, I like the ones in liquid not oil.
  8. Choose a sharp hard cheese—I like pecorino—romano or something that has good strong smell.
  9. You will need a crusty french or italian bread, slice the bread when you are ready to serve, lay out Antipasti into a large flat bowl, make it look pretty, set bread next to it, add the cheese last, slice into 1/4 thick pieces and serve, you need nothing else, it's great to serve before a nice pasta dinner.

You can add all sorts of things to antipasti, I just enjoy this combo. With a glass of your favorite drink you are in a little bit of pig-out heaven!

is the stem of the brocolli that goes to flower, it needs to be simmered in the chicken broth.
The olive oil is added to the finished product. Make sure it is an extra virgin olive oil. Don't be cheap with the oil. Lay the brocolli rabe in the pot of broth, if you are vegan use a vegetable stock. The garlic will make up for that.
